A Mother’s Day Garden Party Menu

Hey Y’all, I’m Rochelle Elizabeth and I’ve been a proud Kush Queen for almost 3 years. I’m from Kansas ( insert cliche Wizard of Oz Joke) and I love baking, spreading love and working toward changing stigmas of cannabis use. My Mama taught me how to bake, so I grew up right beside her in the kitchen. She was always baking for others, and spreading happiness with homemade cookies and banana bread. Now I’m the exact same way. To celebrate our wonderful mother’s, I have put together a Whimsical Garden Party Menu that anyone could recreate. With these four simple recipes you are sure to make your Mother feel like the Queen she truly is. I hope this menu inspires you to make something beautiful for your Mother and I hope you have fun making a mess in the kitchen. I know I did. Xoxo

Edible Lemon Cookie cups with White Chocolate Flower Crowns

(Makes 1 dozen depending on size)

There may be a few tedious steps in this recipe, but it’s Mother’s Day and you gotta go that extra mile for your momma. I promise, when she lays her eyes on these whimsical and elegant cookie cups with white chocolate flower crowns, that you lovingly made for her, she’ll be blown away. These flavors and colors really scream garden party. Just add flowers, sunshine and loved ones. (If cookies from scratch aren't your thing, feel free to pick out your favorite cookie dough and jump to step 5.)

Cookie Cups

What you’ll need

1 bag white chocolate chips

1/2 cup/ 8 tbsp room temp butter ( or cannabutter if you have it!)

1 cup sugar

1 egg + 1 egg yolk

1 tsp baking powder

1 tsp cream of tartar

 Pinch salt

1 1/2-2 cups flour

Lemon extract

Circle Cookie Cutter or Wide Mouth glass

Muffin tin ( mini or regular)

How to do it

Step 1:  Cream together butter and sugar until smooth. If using Cannabutter, tinctures or any other  infused products add them here.

Step 2:  Stir in egg, egg yolk and lemon extract. Continue beating until well mixed.

Step 3:  Add in dry ingredients slowly. Flour, baking powder, cream of tarter

Step 4: Let dough chill for 30 min if possible.

Step 5:  Flour your surface and rolling pin (a wine bottle will work too) and roll out the dough to 1/4 inch thickness.

Step 6:  Take your cookie cutter or wide mouth glass (floured) and cut out the cup molds. You can keep re-rolling out the dough until it’s gone.

Step 7: Flip your muffin tin upside down and flour. Place the cookie dough cut-outs over the bottom of your muffin tin. This is what makes the ‘bowl’ shape.

Step 8: Bake at 350 for 8-10 min.

Step 9: Let cool. Then add Flower Crowns. (directions below)

TIPS

*You want the dough to be a little more firmer than a traditional sugar cookie since we are making cookie bowls.

*You don’t need to press the cookie around the muffin tin. The cookie will naturally bake downwards forming the bowl shape. Flouring the muffin tin ensures the cookies won’t stick or break when you try to remove them.

White chocolate flower crowns

What you’ll need

2 pkg edible flowers

1 pkg white chocolate chips or bark

1 cup pearl sprinkles

1-2 drops purple food coloring

2 tbsp coconut oil

Lemon extract

How to do it

Step 1: Melt White chocolate according to the directions on the pkg

Step 2:  Stir in purple food coloring.

Step 3:   Stir in lemon extract. (Optional, but yummy)

Step 4:  Dip the tops of your cookies in the chocolate. Creating the crown effect.

Step 5:Drop a few pearl sprinkles on the outer edges of the crown and let dry.

Step 6: Gently rinse flowers and remove any green bottoms.

Step 7:  Using the melted chocolate like glue. Dot cookie cups with chocolate and place your flowers.

Step 8: Admire and add Ice Cream (recipe below)

TIPS

* I recommend melting all chocolates with coconut oil if you can’t find bakers chocolate.

* If you want multiple colored crowns separate the chocolate into as many bowls as you want, adding only 1/2-1 drop MAX of food coloring. We want these crowns to be a lovely pastel color.

* Wash and cut any excessive ends off your edible flowers. Have them ready to go and handy on a paper towel by your cookie cups.  The chocolate will hold the flowers in place and will be hidden since it’s the same color you used before. Let set for at least 15 min. Serve with ice cream and friends.

* You can even streamline this recipe by just buying cookie dough and rolling it out. It’ll be harder to flavor the cookie dough, but hey!  The chocolate has lemon extract in it so it’s not a total loss.

Strawberry-Banana Nice Cream

(Makes 2-3 cups)

This is my new favorite ice cream recipe and an absolute staple in my freezer. It still baffles me that bananas can have the EXACT texture of scrumptious homemade ice cream BUT THEY TOTALLY DO!! It’s flippin’ magical, and doesn’t taste like health food at all. I choose the combination of strawberries and bananas because it’s the perfect compliment to our garden party spread. If you want to try a different flavor, then go for it. Peaches, blueberries, raspberries or even just plain banana will all work well with our lemon cookie cups. The possibilities here are truly endless, so experiment away.

What You’ll Need

* 2-3 bananas frozen

* 1 pkg strawberries

* 2 tbsp heavy cream

* 3 tbsp vanilla

1 tbsp honey

Optional: CBD oil ( as much as you want!)

How to do it

Step 1: Rough chop the bananas and strawberries and allow to completely freeze.

Step 2:  Place the frozen bananas, half the strawberries and whipping cream in a food processor and blend until smooth.

Step 3: Enjoy

Optional : Dice fresh strawberries and simmer with honey and CBD Oil on the stove until a thick sauce forms. Let cool and swirl through nice cream. Freeze for at least 15 min before serving.

TIPS

*Add a Tbsp of sugar or sweetener of your choice if you prefer a sweeter flavor.

*If you will be using honey or infusing your Ice Cream with any cannabis oils you will want to start with fresh, not frozen, fruit. Blend all ingredients until smooth and transfer to a freezer safe container. Allow to freeze for at least an hour.

*Bonus Tip:  Try Bananas and Natural peanut butter for a sweet treat even your pups can enjoy.

Chocolate fit for a Queen

My goodness. This chocolate bark is almost too pretty to eat. I just wanna stare at it and get lost in the unicorn galaxy swirls. So simple, yet so majestic, and the perfect addition for your Mother’s Day Garden Party. You are sure to impress with this showstopper! BONUS: You can even bag up a few pieces, add a pretty bow and gift this decadent treat to all the mommas in your life!

What you’ll need

1 pkg white chocolate chips

pink and purple food coloring

Pink sprinkles

Pearl sprinkles

Edible flowers

Coconut oil

How to do it

Step 1:  Gently rinse and break up flowers into small petals.

Step 2:  Melt white chocolate with 2 tbsp coconut oil in microwave.

Step 3:  Line cookie sheet with parchment paper and spread out melted white chocolate

Step 4:  Dot purple and pink food coloring throughout the chocolate base and swirl around to create tie-dye effect

Step 5:  Sprinkle the flower petals and the pink and pearl sprinkles all over.

Step 6: Let set in fridge for 15 min, break into pieces, and enjoy!

TIPS

Lightly warm the cookie sheet in the oven so the chocolate doesn’t harden on you before you’re done decorating.

Add flavored extracts for some extra oomph.

If infusing just add your tinctures or oils to the melted chocolate.

Making a figure 8 with your knife or spoon creates a simple tie-dye effect.

Strawberry Lemonade with floral ice cubes

Who doesn’t love fresh lemonade? Growing up back home my Mama always had fresh lemonade in the fridge, all spring and summer long. It was the best. Making it from scratch is sooo easy, it just takes a shit ton of lemons, a little patience and a lot of love.

What you’ll need

1 cup sugar

1 cup water

3 cups strawberries (reserve a cup for garnish)

5-6 cups cold water

8-10 lemons

I pkg edible flowers

Strainer

Optional: CBD Oil

How to do it

Step 1: Bring 1 cup water and sugar to boil. Let cool.

Step 2: Blend 2 cups of the strawberries to a smooth purée.

Step 3: Squeeze the juice of 8 lemons.

Step 4: Add the lemon juice and purée to the sugar mixture.

Step 5: Stir. Pour everything into your pitcher with cold water and ice.

Step 6: Chop remaining strawberries and put on top.

Step 7: Slice lemons for garnish.

Step 8: Pour into some cute Mason Jars and enjoy. Cheers.

TIPS

Throw some of the leftover edible flowers into an ice cube tray to add a touch whimsy to your drink. The flowers look seriously beautiful floating the ice cubes.

If you would like to make this recipe infused, simply add your favorite oil or tincture to the strawberry purée and stir well.

If you have a strainer, it’s a good idea to use it to get all the extra strawberry seeds out before you pour it into the pitcher. Otherwise it may have the texture of a pulpy orange juice.
